Amro Saeed learned food before he learned photography. He worked as a chef's assistant in a Cairo hotel kitchen, on the line through service, learning how a dish is built, plated, and served at its peak — and how fast that peak passes. He came to the camera to hold that moment: the dish seconds from being eaten, at its most alive. He photographs the way a cook plates, close and intentional, lighting for craving so the crumb, the sear, the steam, and the gloss all read. He knows food from the inside, which is why chefs trust him with theirs. He works from Canada now, but the discipline is the kitchen he came up in. He believes a food photograph has one job: if it does not make you hungry, it has failed. At ioli he directs the recipes built to make you starve.
